Boiling Eggs

Boiling eggs: cold water or boiling water start?

By Tanya Francis · Updated

Both work. Lowering eggs into boiling water is more predictable. Starting them in cold water is gentler, but the timing depends on your stove and your pot.

Boiling water start

  1. Bring the water to a boil, then turn it down to a steady, gentle boil.
  2. Lower the eggs in with a spoon, straight from the fridge.
  3. Cook 5 to 6 minutes for soft, 6½ to 7½ minutes for jammy, 8 to 9 minutes for medium or 10 to 12 minutes for hard.
  4. Move them to ice water.

This is the method the egg timer uses. The clock starts the moment the eggs hit the water, so the result is the same every time.

Cold water start

  1. Put the eggs in the pot in one layer and cover them with cold water by about an inch (2.5 cm).
  2. Bring it to a full boil over high heat.
  3. Turn off the heat, put the lid on and leave the eggs in the hot water.
  4. Move them to ice water when the time is up.
DonenessTime in the covered pot, heat off
Soft3 to 4 min
Jammy5 to 6 min
Medium7 to 8 min
Hard10 to 12 min

Treat these as rough. The eggs are cooking the whole time the water heats, so a big pot on a slow burner gives firmer eggs than a small pot on a fast one. Cook one test egg and adjust.

Number methods

You'll find methods with names like 10-5-10. Each number is a step in that recipe, so read the steps it names and follow them. Your stove isn't the recipe writer's stove, so test one egg first. The best known is the Instant Pot's 5-5-5 method.

Questions people ask

Do you start eggs in cold water or boiling water?

Either. Boiling water gives more predictable timing and usually easier peeling. Cold water is gentler on the shells but the timing depends on your stove.

How long do you boil eggs starting from cold water?

Bring the water to a full boil, turn off the heat, cover the pot and leave the eggs 10 to 12 minutes for hard boiled or 3 to 4 minutes for soft. Test one egg, since stoves vary.

Does starting in cold water stop eggs cracking?

It helps, because the eggs warm up gradually, but it isn't a guarantee. An egg with a hairline crack will still leak.

Which start is better for peeling?

The boiling water start usually peels easier, especially with slightly older eggs and a full ice bath.
