How to peel boiled eggs
An egg that won't peel is usually a very fresh egg. The rest comes down to how you start them and how well you cool them.

Why fresh eggs stick
As an egg ages, the white becomes more alkaline. USDA explains that the pH of the white rises from about 7.4 when the egg is laid to about 9, and that change loosens the white from the membrane under the shell. That's why USDA says older eggs are better for hard cooking. Farm-fresh eggs taste great, but they're the hardest to peel.
Start them in boiling water
Eggs lowered into water that's already boiling generally peel easier than eggs started in cold water. If peeling is your problem, try the hot start first. The cold water vs boiling water page compares the two.
Chill them properly
Move the eggs straight from the pot to a bowl of ice water and leave them 10 to 15 minutes. A cold egg firms up and pulls away from the shell more cleanly. A warm egg tears.
How to peel a boiled egg
- Tap the wide end on the counter. That's where the air pocket is, so it's the easiest place to start.
- Roll the egg gently under your palm so the shell cracks all over.
- Peel from the wide end, getting your thumb under the thin membrane, not just the shell.
- Peel under running water or in a bowl of water. The water slips between the shell and the white and rinses off the small bits.
The spoon trick works well on stubborn eggs: crack the shell, slide a teaspoon under it, curved side against the egg, and work it around.
Vinegar and baking soda
You'll see both recommended. Baking soda makes the water more alkaline, on the same idea as using older eggs. Results are mixed, and some people notice a slight sulfur taste. Vinegar is more useful for cracks: it helps any leaking white set quickly.
Peel now or later?
Peel them as soon as they're cold, or keep them in the shell in the fridge and peel when you need them. The FDA says hard-cooked eggs, in the shell or peeled, should be eaten within 1 week. The American Egg Board is more cautious and says peeled eggs should be eaten the same day. Keep peeled eggs in a covered container. More on how long boiled eggs last.
Questions people ask
Is it easier to peel boiled eggs hot or cold?
Cold. Chill them in ice water for 10 to 15 minutes first. The egg firms up and comes away from the shell more cleanly.
Why won't my boiled eggs peel?
The eggs are probably very fresh. Fresh eggs have a less alkaline white that clings to the membrane. Slightly older eggs, a boiling-water start and a full ice bath all help.
Should I peel eggs before putting them in the fridge?
Either works. Eggs in the shell are easy to grab later, and the American Egg Board suggests eating peeled eggs the same day. Peeled eggs should go in a covered container.
Does baking soda make eggs easier to peel?
It raises the pH of the water, which is the same reason older eggs peel easier. Results are mixed, and some people taste a little sulfur.
